Ailsa Bay werd in 2007 gebouwd door William Grant & Sons op het terrein van de Girvan-distilleerderij in South Ayrshire en in 2009 officieel geopend. Deze Lowland-distilleerderij produceert vooral maltwhisky voor de blends van het bedrijf, maar bracht in 2019 ook de toegankelijke single malt Aerstone uit.
