Dà Mhìle is gevestigd op Glynhynod Farm in West-Wales, waar de familie Savage-Onstwedder sinds 1981 biologisch boert. In 1992 liet John Savage-Onstwedder bij Springbank een whisky stoken en creëerde daarmee de eerste biologische whisky van het moderne tijdperk; de naam Dà Mhìle (Gaelisch voor 'tweeduizend') verwijst naar een millenniumbottling. In 2012 bouwde de familie haar eigen distilleerderij, waar naast whisky ook biologische gin en rum worden gemaakt.
